From Episode II: Vayera with Rabbi Andrew Goodman:

Rim a rocks glass with a lime wedge and dip in oak-smoked sea salt. Put in a scoop of ice. In a shaker, combine ¾ oz of maple syrup, 1 oz fresh lime juice, and 2oz Mezcal. Strain into the prepared rocks glass and garnish with a lime wheel.

For a non-alcoholic version, replace the mezcal with lime seltzer and grill or roast the lime wheel for an extra kick of that roasty toasty flavor.

The smokiness from the salt and mezcal and the optionally-roasted garnish represents the smokey sulfuric destruction of the city, with the salt being an extra nod to lot’s salty wife. Much like the oaky flavor of the sea salt, the maple syrup is kind of like the oak trees/terebinths of Mamre, but really the flavor just plays nicely with the oaky-toasty-smokiness.
