Holy Honey Drop

From Episode 228 - Kedoshim with Rabbi Rebecca Rosenthal:

We’ll start with a tablespoon each of honey and warm water in a cocktail shaker and stirring that until it’s completely dissolved. This effectively makes a honey simple syrup, but we don’t really need to go through the process of heating the way we do when we’re using fruit or herbs because we’re not really extracting or infusing anything.

Once you’ve got your honey syrup for the sweetness of God’s blessings, add in 1 oz fresh lemon juice and 3 oz gin for all the cleanliness and purity we’re supposed to observe. Congrats, we’ve basically just made the classic Bees’ Knees cocktail. What makes it holy? I’m getting to it.

Shake all that with ice and pour into a champagne flute or coup glass, topping with champagne for that effervescent holiness. Garnish with a lemon twist and, if you’re feeling really fancy, a piece of honeycomb.

For a non-alcoholic version, omit the gin and top with Schweppes Bitter Lemon instead of champagne.
