Strawberry Census Spritz
From Episode XXVI: B’midbar with Micah Hart:
As we know, there’s nothing more fun than counting, so we’re bringing in summer something fun and fruity, the Strawberry Census Spritz.
Ok so we’re going to start with another flavored simple syrup. ½ cup water, ½ cup sugar, medium low heat, and stir until until it’s dissolved. Kill the heat and add 4 strawberries, sliced thin, and a small handful of basil leaves (use your judgement). Cover that and let it steep for 30 minutes. Strain and store in a jar in the fridge until you’re ready to use it.
Now to build our Strawberry Census Spritz
Pour 1 oz aperol, ½ oz strawberry simple syrup, and ½ oz lemon juice over ice. Stir to combine and top with sparkling rosé, because this is a pink drink and we’re not even trying to pretend otherwise.
For a non-alcoholic version, we’re making strawberry lemonade.
Pour 1 oz strawberry simple syrup and 1 ½ oz lemon juice over ice, top with about 4 oz club soda, stir and serve.
Spritz or Lemonade, garnish with a lemon, some sliced strawberry, some basil, or some combination of the three.
By the time this is released, Amanda and I will (hopefully) be done with finals. So raise a glass and celebrate the school year, the census, and the summer.

Strawberry Simple Syrup:
½ cup Water

Sparkling Rosé
Lemon Wheel, Strawberry Slices, Basil (garnish)
